Choose Fuyu persimmons to eat crisp like an apple; choose Hachiya persimmons only when they are very soft. Both are fall persimmons, but their ripeness rules differ. An unripe Hachiya can taste intensely tannic and dry your mouth.

How to tell a Fuyu from a Hachiya

Look at the bottom: Fuyus are round and flattened, while Hachiyas usually taper to a point. Shape is a useful clue, but ripeness is the key difference. UC Master Gardeners describe Fuyu as non-astringent and edible while firm; Hachiya is astringent until it softens fully.

How ripe should a persimmon be?

A Fuyu should have developed its orange color. Eat it while it is still firm if you want a crisp texture, or let it soften for a gentler bite. Keep firm fruit at room temperature and check it as it changes.

A Hachiya needs more patience. Leave it on the counter until it feels soft throughout, almost like a water balloon. If it still feels firm, give it more time. Once ready, the pulp is easy to spoon out and works well in recipes that call for a smooth, sweet fruit puree.
